For some reason colder weather triggers my desire for red meat.
I was shopping last night and picked up a big beef roast. As I have a long day today and needed to pick up my daughter tonight I decided to break out the crock pot.
Crock Pot Pulled Beef Tacos
INGREDIENTS
1/2 cup flour
salt and pepper
2 Tablespoons oil
Garlic
1-2 onions roughly chopped
2 cups chicken stock – use beef if you have it – or even water
METHOD
- Combine flour, salt, and pepper
- Dredge roast with seasoned flower
- Heat a large pan over medium high heat, add oil
- Sear roast on all sides
- Put roast into crockpot on low, add onions, garlic and stock and cover pot
12 hours later I opened the door and was greeted by the rich aroma.
It was falling apart.
Shredding took no effort at all.
I warmed some tortillas in a skillet, some beef, cilantro, onion, avocado. The tomato of course is from the garden.
An easy – low effort meal!
